The Bikini Cocktail

Serves 10 people

Ingredients for the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Citrus Syrup: Combine the listed items inside a pan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the burner allowing it to cool entirely. Pour into a sealable bottle, seal keeping it chilled, where it will keep for about one month.

To make Batch Mix: Mix the specified liquids into a large bottle, leave to sit for 60 minutes, then pass it through best through cheesecloth, to ensure it's perfectly clear.

For serving: Measure 85ml from the batch mix into a cocktail shaker packed with ice, gently stirring carefully for one minute until cold. Filter into a chilled martini glass or equivalent, decorate with the cranberries and complete it with a light spray of mandarin oil over the top.
